Tostones are a traditional snack in Puerto Rico and many South and Central American countries, though their name differs from place to place.

Peel the plantains (should be difficult for good green plantains). Slice them into approximately 1" thick slices. Fry the slices in about 1/2" of light oil, until they start browning. Turn them over, and brown the other side. Drain them on paper towels. Remove them from the paper, place the plantains upright on a flat surface, and, with the aid of a thick- and flat-bottomed glass, smash the plantains; they should end up 1/2" thick or thinner. Re-fry the plantains on both sides until they're crispy. Drain once more, salt to taste, and enjoy.
