Cranberry Torte

2 1/2 cupsflour
1 cupsugar
1/4 tspsalt
1 tspbaking powder
1 tspbaking soda
1 cupwhole cranberries
2orange rinds (i.e., the rinds of two oranges), finely chopped
2eggs, beaten
1 cupbuttermilk (or 1 tbsp vinegar and rest of cup of milk)
3/4 cupbutter or light oil
3/4 tspvanilla extract

Combine flour, sugar, salt, baking powder, baking soda, cranberries, and orange rinds. Mix eggs, buttermilk and oil, then add it all to the flour mixture. Grease and flour (and/or optionally, sugar) pans (one large loaf pan and one small one). Bake 1 hour at 350 degrees. Cool 5 minutes. For wetter cake, mix 1/2 cup orange juice and 1/2 cup sugar, and pour it over the top.
