2 1/2 cups | flour |
1 cup | sugar |
1/4 tsp | salt |
1 tsp | baking powder |
1 tsp | baking soda |
1 cup | whole cranberries |
2 | orange rinds (i.e., the rinds of two oranges), finely chopped |
2 | eggs, beaten |
1 cup | buttermilk (or 1 tbsp vinegar and rest of cup of milk) |
3/4 cup | butter or light oil |
3/4 tsp | vanilla extract |
Combine flour, sugar, salt, baking powder, baking soda, cranberries, and orange rinds. Mix eggs, buttermilk and oil, then add it all to the flour mixture. Grease and flour (and/or optionally, sugar) pans (one large loaf pan and one small one). Bake 1 hour at 350 degrees. Cool 5 minutes. For wetter cake, mix 1/2 cup orange juice and 1/2 cup sugar, and pour it over the top.
