Cornmeal Froggies

1 1/2 cupsflour
1 1/2 cupsrough ground corn meal
1/2 tspsalt
1 cupbutter, chilled
1/4 cupbrown sugar
3/4 cupmaple syrup, dark amber or grade B
1/2 tspvanilla
2 tbspsesame seeds
1 tspdark sesame oil

Mix flour, corn meal, and salt together. Blend in the butter (stop blending before the mixture balls up). Then, blend in the brown sugar. Add the maple syrup and vanilla, and blend them in. (Optionally, chill the dough at this point to make it easier to work with.)

Put the sesame seeds and dark sesame oil in a frying pan, and toast the seeds until they start to get brown.

Spoon a heaping tablespoon of dough into each hole in a muffin pan, and spoon a little dollop of the toasted sesame seeds on top. Bake at 350 degrees for about 10 to 15 minutes, until nicely browned. Makes about 30 cookies.
