|1 tsp||baking powder|
|1 tsp||baking soda|
|1 cup||whole cranberries|
|2||orange rinds (i.e., the rinds of two oranges), finely chopped|
|1 cup||buttermilk (or 1 tbsp vinegar and rest of cup of milk)|
|3/4 cup||butter or light oil|
|3/4 tsp||vanilla extract|
Combine flour, sugar, salt, baking powder, baking soda, cranberries, and orange rinds. Mix eggs, buttermilk and oil, then add it all to the flour mixture. Grease and flour (and/or optionally, sugar) pans (one large loaf pan and one small one). Bake 1 hour at 350 degrees. Cool 5 minutes. For wetter cake, mix 1/2 cup orange juice and 1/2 cup sugar, and pour it over the top.
